Today I'm here to share a few of my favorite recipes with you and a bonus is they are all pretty fast and easy to make!
White Chicken Chili
2 cups shredded chicken ( I just shred a Costco rotisserie chicken)
1/2 medium onion, chopped
2 tblsp. oil
1-2 tsp minced garlic
2 cans of great northern beans, drained and rinsed
1 can chicken broth
1 small can chopped green chiles
1 tsp salt
1 tsp cumin
1 tsp oregano
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 cup sour cream or greek yogurt
1/2 cup whipping cream
Add oil to stock pot and cook onions, garlic, and chicken. (This is why I love the Costco rotisserie chickens, because you don't have to wait for it to cook)
Add beans, broth and seasonings and bring to a boil.
Simmer for 30 min.
Add sour cream and whipping cream.
Salmon Tacos
2 lbs salmon fillet
Salt & Pepper
Cumin
1 3/4 cup mayo or greek yogurt
2 tblsp water
2 tblsp vinegar
1 seeded jalapeno
1 tsp minced garlic
1/2 cup cilantro
Salt & Pepper
2 Limes
Olive Oil
Salt & Pepper
Shredded cabbage
white corn tortillas
fresh salsa or pico de gallo
Sprinkle salmon with salt, pepper, and cumin and bake at 375 for 17 minutes (or until fish flakes easily with a fork) I always watch fish closely, because you don't want to over cook it!
Combine the second set of ingredients in a blender to make your sauce.
After you remove your fish from the oven, squeeze 1 of your limes over the top.
Squeeze the other lime over the top of the cabbage and toss with a little olive oil, salt, and pepper.
Now just assemble your tacos and enjoy!
Turkey Meatloaf with Sweet & Sour Sauce
2/3 cup bread crumbs
1 cup milk
2 lbs ground turkey
2 eggs, beaten
1/4 cup chopped onion
1 tsp salt
1 tsp black pepper
6 tblsp brown sugar
1/2 cup ketchup
2 tsp dijon mustard
Preheat oven to 350.
Combine first 7 ingredients and press into a greased loaf pan.
Combine last 3 ingredients in a small bowl and spread over top of meatloaf.
Bake for 1 1/2 hours.
Delicious!
