Greek Tacos





I found this recipe on Just Cook Already a few weeks ago and finally tried it for dinner tonight. It was a HUGE hit with Landon. He even said it's one of his top 5 favorite meals I've made so that should say a lot. So I thought I would share the recipe with ya'll...


Greek Tacos

{i adjusted this recipe to serve just 2 of us.}

Marinade 2-4 large chicken breasts in
this Greek Salad Dressing. (marinade recipe originally from Our Best Bites)
1/4 c. freshly squeezed lemon juice
1/4 c. white vinegar
2 tsp. sugar
1/2 tsp. kosher salt
1/2 tsp. seasoning salt
1/2 tsp. red pepper flakes
(this will not make the dressing spicy, just flavorful)
1/4 tsp. freshly ground black pepper
4 cloves garlic, smashed and peeled
1 c. canola oil (or other salad oil)
1/2 c. crumbled feta cheese
3/4 tsp. Italian seasoning
1/4 tsp. dry oregano

In a blender, combine all the ingredients through the garlic. Blend until smooth. Then add the oil and feta and pulse a few times (more if you want a creamier consistency). Whisk in the herbs. If possible, refrigerate for at least an hour before serving.

After marinading for at least an hour, grill the chicken and then cut into bite size pieces. Serve on tortillas (I like the ones you cook yourself) with hummus and greek salad.

1 cucumber sliced
1 tomato sliced
1/4 c feta cheese
juice of 1/2 a lemon
1/4 c olive oil
1 T lemon pepper seasoning
salt and pepper to taste.

Table & Chair Matchup

The dining room is one place people really do their home a disservice.  How? They have a matching dining set, a generic light fixture, and no rug under their table.  Raise your hand if that's you.  Don't worry, you're not alone.  Just by adjusting those 3 things (mix up your chairs, add a fun light fixture, add a rug) you can really revamp your dining room.  Just bought your dining set and can't afford new chairs?  Easy.  Keep your side chairs, but find some upholstered chairs to add as captain's chairs on each end of the table.  It will mix it up just enough! Plus you'll have 2 extra chairs when you have guests over.  Another option is painting your chairs a different color from your table and add some fun cushions or reupholstering the seats.                                             ...
