The past few weeks strawberries have been at their peak, so my mom and I decided to take advantage and make some strawberry freezer jam. It is SO delicious! I'm bound and determined that I'm taking some with me to Iowa even if I have to pack it in a cooler. It makes the best PB&J (on Grandma Sycamore's White Bread of course) and a couple of spoonfuls added to a glass of lemonade makes the BEST strawberry lemonade! Here's the recipe if you want to try...
For every batch you will need:
4 cups blended fruit (I like mine blended smooth)
1 1/2 cups sugar
1/3 cup Ball instant fruit pectin
Mix the pectin and sugar in a bowl and then add fruit. Whisk for about 3 minutes or until it starts to thicken and the sugar/pectin is dissolved. Then just pour into jars! I love the little plastic ziploc jars. Let it sit for 24 hrs and the put in the freezer. It lasts for up to a year in the freezer (I'm always out of it by then) and 3 weeks in the fridge. This recipe is the best because you don't have to cook it! I also made some raspberry that turned out great too.
