Grilled Lime & Ginger Shrimp w/ Peanut Dipping Sauce



YUM. I don't usually post about meals I make, but this one is worth sharing. I will say that I have become a pretty good cook over these past 2 years of being married. 
Well I should say I've become really good at following a recipe and making it turn out good. ;) 
My go to cookbooks are a series that my best friend's mom compiled called "The Domestic Art." 
There are 3 volumes and they are all amazing! 
I'll share the recipe for this meal I made, but I would recommend at least buying the first book. Let me know if you're interested and I'll get you her info!





Grilled Lime & Ginger Shrimp with Peanut Dipping Sauce

(I served mine with homemade ham fried rice and grilled pineapple)



What You'll Need for the Grilled Shrimp:


1 lime

3 Tblsp. olive oil

3 Tblsp. soy sauce

2 grn. onions, chopped

1 1/2 tsp. fresh ginger, grated

20 lg. uncooked shrimp (about 1 1/2 lbs) with tails removed

wooden skewers


Grate 3/4 tsp. lime zest, and juice the lime. In a shallow glass baking dish, combine the zest and juice, olive oil, soy sauce, grn onions, and ginger. Mix well. Add shrimp, turn to coat, refrigerate for 1 to 2 hrs. Soak wooden skewers in water. Thread 5 shrimp on each skewer and grill for 2 to 3 minutes per side.



Peanut Dipping Sauce:


2 tsp. canola oil

3 garlic cloves, minced (I just use the minced garlic you can buy in the jar)

1 1/2 tsp. red pepper flakes (I use less because I don't like it as spicy)

1/2 cup hoisin sauce

3 Tblsp. chunky peanut butter

1/2 cup water

Juice of 2 limes


In a small saute pan, heat oil over medium heat. Add garlic and saute. Add pepper flakes and then stir in the hoisin sauce, peanut butter, water, and lime juice. Reduce heat and simmer about 3-4 minutes. (Sauce can be refrigerated for up to 1 week)


Enjoy! This recipe takes a little time to prepare but it's worth it!

Table & Chair Matchup

The dining room is one place people really do their home a disservice.  How? They have a matching dining set, a generic light fixture, and no rug under their table.  Raise your hand if that's you.  Don't worry, you're not alone.  Just by adjusting those 3 things (mix up your chairs, add a fun light fixture, add a rug) you can really revamp your dining room.  Just bought your dining set and can't afford new chairs?  Easy.  Keep your side chairs, but find some upholstered chairs to add as captain's chairs on each end of the table.  It will mix it up just enough! Plus you'll have 2 extra chairs when you have guests over.  Another option is painting your chairs a different color from your table and add some fun cushions or reupholstering the seats.                                             ...
